The sensual tastes and smells of my favorite aunt?s homemade Italian cooking were gastronomical delights. How I loved her kitchen! How I loved watching her make dinners from scratch using the recipes my uncle showed her. Their fresh, high quality, wholesome ingredients were food for the gods especially in war-rationed years. Her gravy, meatballs, and sausages were great; her chicken and pasta dishes even greater; her eggplant the absolute greatest. I tried many times to duplicate her culinary success. I failed miserable because ultimately pinches and dabs are not equal.
Hubby, four children, an invalid mother, the house, and a full time job limited time so I planned less and less Italian dishes. I cringed each time my family asked a restaurant for a recipe then gave it to me. I served more and more take out and prepackaged foods. Luckily about that time Michael Angelo Renna and his mother Sara founded a company whose Old Italian style frozen entrees are gourmet. I found one of their products, the meat lasagna, at the nearby BJs, switched containers, and passed it off as my own. My family raved, requested seconds and thirds, then asked me what night I was going to make it again. My conscience got me. I blushed and told the truth. years now.
Two weeks ago was an especially hectic one for me. Medical appointments, tests, and a houseful of family cancelled plans for an outdoor BBQ. That?s when I decided on Italian buffet with super size trays of signature meat lasagna, eggplant parmesan, and chicken parmesan. I left my son who manages a small restaurant to make some spaghetti while I headed to the club store. No fuss, muss, or prep time needed, my guests actually thought each entree was catered. Michael Angelo?s freshness and quality came through for me. I should have known better than to allow my freezer to run low on its MA chicken, risotto, manicotti, flat bread, shrimp, sausage, tilapia, and pasta.
Right now hubby is on a special diet?low calories, fat, sodium, carbs and taste. Bet while my fat cat is away, this mouse will play. My next shopping list includes nutritious, microwaveable single sized servings of Michael Angelo?s Meat Lasagna, Vegetable Lasagna, Eggplant Parmesan, Baked Ziti and Meatballs, Shrimp Scampi, and Chicken Parmesan.
