By an odd set of coincidences Wife and I ended up having three straight evenings entertaining at the end of last week.? One we hosted.? One we were guests. And one we were 'helping' guests.? I'm just going to focus on the first and last.

Last Thursday, I had a business colleague who wanted get together with our wives (who had never met).? I invited them over for dinner.? The colleague and I had a major planning session for a mutual client in the morning so I didn't have a whole lot of time to prepare.? So this is an example of how to make a nice meal with significantly less effort.

First Course - Charcoutrie

That's a French term for cured meats and is a traditional first course to meals both simple and nice.? I had a bunch of good stuff available - there was some cured sausage from France the daughter #3 had given me, some homemade pate in the freezer (it freezes well), and some cured Kentucky ham that another business colleague had recently sent me.? I got some pickled peppers, cornichons and olives from Whole Paychecks.? You can easily buy the equivalent meats there or other high end delis.

Second Course - Asparagus with Aioli

The Aioli was left over so I didn't have to make that.? I cooked the asparagus ahead of time and chilled it so not much work required there either.

Third Course - Homemade Pasta

OK this was a bit more grandiose as I made the pasta myself.? I don't consider it to be that difficult as now after some practice I can whip out a batch in about 45 minutes.? You could use bought pasta.? The key was the sauce.? I reduced two cans of beef broth with a teaspoon of ham base, some sherry wine, and some herbs to about 1/4.? I strained it and added a cup of cream and reduced it again to 1/3.? There's not a whole lot of work associated with reducing it other than stirring it once in a while.? It does take some time - around an hour - but it's all done ahead of time.? Homemade pasta cooks really fast, 2 minutes, so you're not gone long from the guests.

Wife has become the Granita Queen.? Granita is basically fruit that is pureed, mixed with water and sugar and allowed to freeze.? But periodically you scrape during the freezing process to get a very snow cone type of texture.? Very light, flavorful and refreshing.? Great after a big meal.? You could easily substitute purchased sorbet.

The point of this is that you can prepare a very nice, classy type meal without tons and tons of work if you are willing to buy good stuff and to present it in courses.

Vast cosmic event leaves record in ancient trees

The wooden hearts of two cedar trees hold a 1200-year-old cosmic mystery ? evidence of an unexplained event that rocked our planet in the 8th century.

Cosmic rays are subatomic particles that tear through space. When they reach Earth they react with the oxygen and nitrogen in the atmosphere, producing new particles. One of these ? carbon-14 ? is taken up by trees during photosynthesis and is "fixed" in the tree's annual growth ring.

Fusa Miyake at Nagoya University, Japan, and his colleagues examined the carbon-14 content of two Japanese cedar trees and were surprised to find that there was a 1.2 per cent increase in the amount of the isotope between AD 774 and 775. The typical annual variation is just 0.05 per cent.

Miyake also found an increase in the carbon-14 record of North American and European trees around that time, as well as an increase in the isotope beryllium-10 in Antarctic ice cores ? another isotope produced by cosmic rays.

What cosmic event led to the ray boost? A supernova would do it, but Miyake points out that such an event would have left a visible trace in today's sky. It could have been a solar flare ? but only if the flare was more energetic than any discovered so far.

"I cannot imagine a single flare which would be so bright," says Igor Moskalenko, an astrophysicist at Stanford University, California, who was not involved in the work. "Rather, it may be a series of weaker flares over the period of one to three years."

This is not the first time that tree records have suggested a cosmic event occurred in the mid 770s. Researchers from Queen's University Belfast, UK, also recently found an increase in carbon-14 in tree rings at that time but their work has yet to be published.

Mike Baillie, a tree ring researcher at Queen's, has found evidence in the historical record that suggests something unusual did indeed happen at that time. The 13th-century English chronicler Roger of Wendover is quoted as saying: "In the Year of our Lord 776, fiery and fearful signs were seen in the heavens after sunset; and serpents appeared in Sussex, as if they were sprung out of the ground, to the astonishment of all."

Supervolcanoes 'quicker to blow'

The largest volcanoes on our planet may take as little as a few hundred years to form and erupt.

These "supervolcanoes" were thought to exist for as much as 200,000 years before releasing their vast underground pools of molten rock.

Researchers reporting in Plos One have sampled the rock at the supervolcano site of Long Valley in California.

Their findings suggest that the magma pool beneath it erupted within as little as hundreds of years of forming.

That eruption is estimated to have happened about 760,000 years ago, and would have covered half of North America in its ash.

Such super-eruptions can release thousands of cubic kilometres of debris - hundreds of times larger than any eruption seen in the history of humanity.

Eruptions on this scale could release enough ash to influence the global weather for years, and one theory holds that the Lake Toba eruption in Indonesia about 70,000 years ago had long-term effects that nearly wiped out humans altogether.

What little is known about the formation of these supervolcanoes is largely based on the study of crystals of a material called zircon, which contains small amounts of radioactive elements whose age can be estimated using the same techniques used to date archaeological artefacts and dinosaur bones.

Zircon studies to date have suggested that the time between the formation of the enormous magma pools and the eventual super-eruptions can be measured in the hundreds of thousands of years.

Now, Guilherme Gualda of Vanderbilt University and his colleagues present several lines of evidence from the Bishop Tuff deposit at Long Valley, suggesting that the pools are "ephemeral" - lasting as little as 500 years before eruption.

Initially, the magma pools are nearly purely liquid rock, with few bubbles or re-crystallised minerals.

Over time, crystals develop, but the process stops at the point of the eruption. As a result, the characteristic development time of these crystals can also give an estimate of how long a magma pool existed before erupting.

Rather than zircon, the team's target was crystals of the common mineral quartz.

Because the processes and timescales of quartz formation in the extraordinary underground conditions of a magma pool are well-known, the team was able to determine how long the crystals were forming within Long Valley's supervolcano before being spewed out in the eruption.

Their estimates suggest the quartz formed over a range of time between 500 and 3,000 years.

"Our study suggests that when these exceptionally large magma pools form they are ephemeral and cannot exist very long without erupting," said Dr Gualda.

"The fact that the process of magma body formation occurs in historical time, instead of geological time, completely changes the nature of the problem."

At present, geologists do not believe that any of Earth's known giant magma pools are in imminent danger of eruption, but the results suggest future work to better understand how the pools develop, and aim ultimately to predict devastating super-eruptions.
